This grilled fish recipe requires no deep frying and uses simple, accessible ingredients. The roasted potatoes and cherry tomatoes create a caramelized bed that keeps the fish moist and flavorful during baking.
The ingredients are straightforward and available in most Libyan households. You will need 2 white fish fillets, 3 tablespoons extra virgin olive oil, 2 tablespoons fresh lemon juice, half a teaspoon dried parsley, 6 small potatoes (peeled and halved), half a cup cherry tomatoes, and butter for greasing.
Preheat your oven to 220°C. Grease a baking dish with butter. Wash and peel the potatoes, cut into halves, and arrange in the dish.
